Open-Faced Balsamic Vinegar Mushroom and Fried Egg Sandwich

INGREDIENTS

500 g of champignon mushrooms
1 large or 2 small shallots, peeled and finely diced
1 garlic clove, peeled and finely minced
1 tablespoon of brown sugar
1 tablespoon of soy sauce
2 tablespoons of Carandini Emilio Gold Balsamic Vinegar of Modena
40 g of butter
Extra virgin olive oil
A few sprigs of fresh thyme
A few sprigs of fresh marjoram
Salt, chili pepper flakes

To serve:

4 slices of whole wheat toasted bread
4 eggs
Extra virgin olive oil
Carandini Emilio Gold Balsamic Vinegar of Modena
A few sprigs of fresh thyme

Method

Clean and slice the mushrooms.

Heat 2 tbsp of oil in a large pan over medium heat, add the diced shallots and stir. Add half of the butter and cook for 3-4 minutes, stirring.

Add the mushrooms, salt, chili pepper and stir well.
Cook for 3-4 minutes, stirring frequently.

Add the brown sugar, soy sauce and Balsamic Vinegar. Cook, stirring occasionally, until the mushrooms are soft for 3-4 minutes. Add the minced garlic and the remaining butter and cook for another 4-5 minutes until the mushrooms are tender and the liquid thickens.

Serve with fried eggs in evoo seasoned with salt and pepper over a toasted slice of bread.

Garnish with thyme and Balsamic Vinegar of Modena and serve immediately.
