Roast fillet of beef on beans cream with asparagus

For the Fillet

200 g fillet of beef (2 fillet of 100 g each )
3 tbsp of Extra Virgin Olive Oil
2 tbsp of Applelixir with Apple Cider Vinegar , Acai, Aronia and Elderflowers
Salt and pepper
Rosemary, laurel and juniper berries

For Cream and Vegetables

2 sprigs of grapes
1 can of boiled borlotti beans
Milk
6 Asparagus
Radicchio

Method

Mix extra Virgin Olive oil, Applelixir with Apple Cider Vinegar , Acai, Aronia and Elderflowers , salt and pepper . Massage meat with the mix of Oil and Vinegar and let it rest out of the fridge for 30 minutes.

Heat a pan and cook the fillets 2 minutes each side. Put a baking paper sheet on a baking tray and put the fillets together with aromathic herbs rosemary , laurel and juniper berries ). Bake for 7 minutes at 180°.

In the meantime , cook asparagus in abudant salt water. Rinse the borlotti beans and heat them in extra virgin olive oil. In a blender mix the beans with milk until they become creamy . Put the 2 sprigs of grapes in the same pan of the meat and brown . Clean and cut radicchio. Remove the meat from the oven and cut into slices. Serve the fillet of beef on borlotti beans cream with asparagus and radicchio.
