Smoked salmon pancakes with Blueberries and Wild Berries Glaze with Balsamic Vinegar of Modena

Ingredients for 12 pancakes

plain flour 300g
baking powder 2 tsp
15 g butter
2 tbsp of sugar
butter 25g, melted and cooled
eggs 2, beaten

smoked salmon 300 g
100 gr of blueberries
Some leaves of basil

Method

Whisk together the flour, milk and egg until you have a smooth batter.
Leave to stand for 20 minutes.

Line a dinner plate with baking parchment. Put a 20 cm non-stick frying pan over a medium heat. Pour a ladleful of batter into the pan, swirling so it covers the base in a thin layer. Cook the pancake for 30 seconds to 1 minute, then flip it over and cook the other side. Remove from the pan on to the prepared plate.

Repeat with the remaining mixture until you have 12 pancakes, layering with a sheet of baking parchment between each one to prevent sticking.

Moove the pancakes on a plate and top with slices of smoked salmon, blueberries and some basil leaves.

Garnish with Wildberries Glaze with Balsamic Vinegar of Modena and enjoy!
