Parmesan risotto with radicchio stewed in Carandini Yellow Tower Sweet White Vinegar pine nuts and parmesan cheese shavings

500g rice

300g radicchio cut in strips

Grated 100g – 50g flakes of Parmigiano Reggiano

50g pine nuts

100g butter

Carandini Yellow Tower Sweet White Vinegar

2lt of meat broth

Half a cup of cream

salt q.s.

Method

Put in a pan the extra virgin olive oil and a half portion of butter. Add the rice and toast for a few minutes on a low heat. Add the broth and cook for about 20 minutes.

Meanwhile, in a saucepan simmer the radicchio with Carandini Yellow Tower Sweet White Vinegar and a pinch of salt. Cook quickly a couple of minutes, half cooked add the cream and the other half of the butter. When cooked, add the grated Parmesan and stir quickly.

Serve and garnish with the cooked radicchio and the flakes of Parmigiano Reggiano.
