Method

Peel and cut the pears into wedges. Wrap the pears with the speck, place them in a baking dish and bake for 30 minutes at 150°

Melt on a low heat in a pan the gorgonzola with a cup of single Cream.
Remove the pears from the oven and place on a plate.

Pour over the warm gorgonzola mousse.

Add the chopped walnuts and the Carandini Glaze with Balsamic Vinegar of Modena PGI.
