Healthy Caponata with Organic Apple Cider Vinegar with the mother

1 big eggplant
2 celery stalks
2 onions
4 spoons of extra virgin olive oil (2 for cooking eggplant and 2 for celery stalks and onion)
Salt
2 spoons of tomato sauce
5 spoons of Carandini Organic Apple Cider Vinegar
2 teaspoons of sugar
Green Olive
Capers
3 chopped basil leaves

Method

After cleaning, cut eggplant and leave under cool water with salt.

Cut two celery stalks and two onions. Put two spoons of oil in a pan and, after a couple of seconds, add celery stalks and onions. Add water if needed.
Cook well to let them soften.
Add salt.

Take an other pan, put oil and add eggplant (try not to fry it!). Add salt and add the cooked celery stalks and onions, Add two spoons of tomato sauce.

In a bowl mix 4/5 spoons of Organic Apple Cider Vinegar with the mother and two spoons of sugar. Season the caponata.

Add some green olive, capers and some chopped basil.

Try it in order to understand if the proper bitter-sweet taste is reached.

Let it cool and serve!
