Roasted Vegetabels with Applelixir with Apple Cider Vinegar, Matcha Tea, Spirulina and Mint

1 smal pumpkin
2 carrots
1 red beet medium dimension
Extra Virgin Olive Oil
Kosher salt and black pepper
2 tbsp of Applelixir with Apple Cider Vinegar , Matcha Tea, Spirulina and Mint
1 cup of fresh mint leaves
Pistachios

Method

Preheat oven to 180°.

Lightly oil a baking sheet or coat with nonstick spray. Place pumpkin , carrots and beet in a single layer onto the prepared baking sheet .

Place into oven and bake for 30 minutes.

Add Extra Virgin Olive Oil, Applelixir with Apple Cider Vinegar , Matcha Tea, Spirulina and Mint , salt and pepper .

Serve roasted vegetables with the dressing and fresh mint leaves .
