King prawns on crushed avocado with carandini saffron glaze

500g king prawns

1 bunch datterini tomatoes

1 punnet beetroot sprouts

4 avocados

50 ml Carandini Saffron Glaze

Extra virgin olive oil, salt and pepper to taste

Method

Devein the prawns and steam for 5 minutes.
In the meantime, wash and cut the avocado into chunks. Then blend the avocados with extra virgin olive oil, salt and pepper to produce a smooth dense cream.

Add the Carandini Saffron cream to the avocado cream and mix thoroughly until smooth.Assemble the dish using a food ring mould to create a round base with the avocado at the centre of the plate.

Place the king prawns on bed of avocado. Place the datterini tomatoes, which have been washed and cut in half, as decoration around the composition.

Drizzle with Carandini Saffron cream. Decorate with beetroot sprouts and serve.
