Mediterranean Salad with White Condiment e Parmigiano Reggiano Carandini Glaze

2 fresh fennels

2 blonde oranges

200g toasted pine nuts

200g raisins

Extra virgin olive oil, salt and pepper to taste

50 ml Glaze with White Dressing & Parmigiano Reggiano

Method

Soak the raisins for 20 minutes in lukewarm water. Wash and remove the fronds from the fennel, and slice the whole fennels into thin strips using the vegetable slicer. Supreme the oranges using a serrated knife.

Drain and gently squeeze the raisins and add all the ingredients to a bowl together with the toasted pine nuts. Season with White Dressing & Parmigiano Reggiano Glaze, extra virgin olive oil, salt and pepper and then mix.

Place in salad bowls.
Decorate with the fennel fronds and serve.
