Ricotta cheese and pine nuts flakes with asparagus and Carandini Glaze with Balsamic Vinegar of Modena

A bunch of asparagus
Pine nuts 50 g
Ricotta Cheese 200 gr
Carandini Glaze with Balsamic Vinegar of Modena
Arugula
Radishes
1 Orange

Method

Clean the asparagus and boil them in salted water. In the meantime, clean arugula and radishes.

Put ricotta cheese in a bowl, season with salt and pepper and drizzle with olive oil.
Add chopped pine nuts and mix everything in order to obtain a frothy consistency.

Cut into strips asparagus and serve them with ricotta, add radishes, orange slices, chopped pine nuts and some arugula.

Season with Extra virgin olive oil and drops of Carandini Glaze with Balsamic Vinegar of Modena PGI
