400g of veal rump with all fat removed by knife then minced

2 bunches of rocket , cut into long strips

200g Parmesan cheese

Half a cup of extra virgin olive oil

Carandini Torre Gialla

Carandini Torre Oro

Salt and pepper to season

Method

In a bowl, put the meat, a pinch of salt, a pinch of pepper, 1/4 cup of E.V. oil and Carandini Torre Gialla. Mix everything with a fork and let stand for 30 minutes in the refrigerator by covering the mixture with cling film.

Meanwhile, in a nonstick pan place the parmesan wafers around to achieve about 8 cradles. Take the meat out of the fridge place them in the molds to give the desired shape. Serve by placing near the meat the wafers of Parmesan cheese, rocket and drizzle with olive oil and Carandini Torre Oro.
