Method

Prepare the rice according to the instructions on the package. You will need approximately 40 g (of uncooked rice) per onigiri.
Allow the rice to cool and in the meantime prepare the ingredients for the filling.
Cook the tuna fillet in a frying pan for a few minutes on each side, so that the centre remains soft.
Then break up the tuna by crushing it with the prongs of a fork.
Add a tablespoon of mayonnaise to the tuna and mix everything together.

Prepare a bowl of water mixed with a tablespoon of salt.
Wet your hands and take the equivalent of half a cup of cooked rice.
With your hands, start forming a ball, then make a hole in the middle with your finger and place the filling in the centre.
Then fold the rice back on itself until it forms a ball.
Now start to shape the ball into a triangle using the palm and fingers of your hand so that they form an angle.
Once the triangle is formed, decorate with the nori seaweed.

Our finest vinegars bear the names of our ancestors and come in two different categories:
The "dense" vinegars — Emilio Gold, Emilio Silver and Bianca — creamy in texture due to the high density of grape must, matured in wooden barrels.
The "aged" vinegars — Antonio Gold and Giuseppe Silver — left to mature in wooden barrels for many years.
