Trout with veggies and beurre blanc with Rosa Rosè Wine Vinegar

1 salmon trout fillet
1 fennel
2 purple carrots
50 g green beans
160 g cold butter
30 ml dry white wine
30 ml Rosa Rosè Wine Vinegar
10 g shallot
fine salt
1/2 teaspoon lemon juice
pepper

Method

Cut the trout fillet into large pieces and pan-fry for a few minutes on each side.
Cut the vegetables into centimetre-thick strips and boil for about ten minutes in salted water.
Cut the butter into pieces of similar size if possible.
Take a medium-sized high-sided saucepan and add the dry white wine and Rosa rosè wine vinegar and bring to the boil.
When the rosè wine vinegar and wine start to boil, add chopped shallot, salt and pepper.
Then lower the heat and continue simmering until reduced.
Remove the saucepan from the heat and add the butter cubes one at a time as the previous one has melted. If they struggle to melt, you can put the saucepan back on a low heat for a minute.
The liquid should never boil.
Once all the butter has melted, add a few drops of lemon and strain.
Serve still warm over the vegetables and trout.
