Smørrebrød with Ham, Beetroot, Dill and Balsamic Vinegar of Modena

200 g of ham
200 g of beetroot
½ teaspoon of cumin seeds
½ teaspoon of salt
Freshly ground black pepper
200 g potatoes
½ small red onion
1 tablespoon of Carandini Balsamic Vinegar of Modena Emilio Silver
2 tablespoons of crème fraiche
1 tablespoon of horseradish (or horseradish sauce)
Finely grated zest and juice of 1 orange
75 g of arugula
Dill
Anise
Slices of rye bread

Method

Preheat the oven to 180°C.

Slice the beetroot and arrange them in a baking tray with cumin seeds, half of the orange juice, and olive oil. Sprinkle generously with salt and freshly ground black pepper. Mix well, then cover with foil and bake for approximately 40 minutes until tender. Cut the beetroot into small cubes.

Meanwhile, cook the potatoes in boiling salted water for 12 minutes until tender. Drain, and when cool, cut them into 1cm cubes.

In a bowl, mix the beetroot with the potatoes, dill, red onion, horseradish, remaining orange juice, and Carandini Balsamic Vinegar of Modena Emilio Silver. Mix well and adjust seasoning to taste.

Spread crème fraiche on the slices of rye bread, add a few leaves of arugula, then top with the beetroot and potato mixture. Add the ham and garnish with dill and orange zest.
