Risotto with purple carrots and stracciatella

Ingredients for 4 people

320 gr of Carnaroli rice
3 tablespoons of Carandini Silver Tower Balsamic Vinegar of Modena PGI
150 gr of buffalo stracciatella
1 shallot
1 liter of vegetable broth
5 purple carrots
Salt and Pepper to taste
1 tbsp of extra virgin olive oil
80 gr of grated Parmigiano Reggiano
1 knob of butter
fresh aromatic herbs to taste to decorate the dish

Method

Peel the carrots, wash them, cut them into rings and boil them, keeping aside the colored water obtained.

Blend the boiled carrots in a blender together with a pinch of salt, ground pepper, a spoonful of the colored carrot cooking water and a spoonful of Carandini Silver Tower Balsamic Vinegar of Modena PGI.
Keep aside.

Finely chop the shallot and fry it with a tablespoon of extra virgin olive oil in a high-sided saucepan.
Add the rice, toast it and gradually add the vegetable broth.

While the rice is cooking, add two ladles of the carrot cooking water and the chopped carrots to the risotto. Adjust the flavor with salt and pepper to taste. Once cooked, turn off the stove and whisk the risotto with the butter and grated Parmigiano Reggiano.

Serve the risotto on the plates, add a spoonful of stracciatella to the center of each one and a few drops of Carandini Silver Tower Balsamic Vinegar of Modena PGI. Garnish with fresh aromatic herbs.
