Radicchio, walnuts and ricotta rolls with red berries vinaigrette

For the Vinaigrette

70 g of blueberries
2 Tbsp of honey
1 and ½ tbsp of Dijon mustard
1 Onion
Extra Virgin Olive Oil
Water
½ Cup of Applelixir with Apple Cider Vinegar , Acai, Aronia and Elderflowers
Salt and pepper

For Rolls

Pink Radicchio
½ Apple
50 g of ricotta
cheese
Chives
Pecan
Walnuts

Method

For the dressing put in a saucepan blueberries with honey and some
water. Bring to a boil and lower the flame . Cook for 20 minutes until
they solve. Then remove from the heat and let it cool.
Put all the ingredients , excpet Extra Virgin Olive Oil, in a blende and mix.
Then add some extra virgin olive oil and mix until it becomes smooth .

Clean and cut radicchio. Cut apple into slices. Add to ricotta chesse some
chives and mix. Serve radicchio with ricotta cheese and chopped pecan walnuts and season with the vinaigrette.
