Puff pastry baskets with fresh robiola cheese, pears, Walnuts and Balsamic Vinegar of Modena PGI

Ingredients (for 4 baskets):

1 sheet of Puff pastry
200 g fresh robiola cheese
3 small pears
80 g of argula
Walnuts
Balsamic Vinegar of Modena PGI Emilio Gold
Extra Virgin Olive Oil
Salt
Sesame seeds
1 egg or 1 glass of milk
Pepper and thyme
20 g of butter

Method

Take the puff pastry sheet and cut with a knife 4 square of 12 x 12 cm circa. Cut ½ cm by side. Prick with a fork the center.
To make more consistent the corner brush some egg or in alternative milk. Add sesame seeds and bake in preheated oven at 180° for 10 - 12 minutes – wait until the puff pastry swells and browns.

Remove from the oven.

In the meantime prepare the filling.
Cream the fresh robiola cheese with some extra virgin olive oil and salt.

For a more intense aroma add some pepper and thyme.

Cut pears into small cubes and brown them in a pan for 3 to 5 minutes with 20 g of butter, then add two spoons of Emilio Balsamic Vinegar of Modena. Mix together until it becomes a sauce.

Clean, rinse and cut the argula.

Create the puff pastry baskets: spread the goat cheese cream, add some argula. Add a spoon of pears in sause of Balsamic Vinegar of Modena PGI and some hazelnuts finely chopped.

Serve with a few drops more of Emilio Balsamic Vinegar of Modena.
