Bianca Highball - Non-alcoholic cocktail with Bianca Sweet White Vinegar

1 dash Black Pepper Tincture
1 dash Celery Bitters
22ml Fresh lemon juice
15ml Fresh cucumber juice
15ml Mint Syrup
15 ml Carandini Bianca Sweet White Vinegar
15ml Verjus Blanc (brand Fusion)
Top with sparkling water

Suggested match

Method

Add all ingredients to a small shaker tin (except the sparkling water). Add cubed ice to the tin and give a hard shake for 5 seconds. Strain off liquid using a hawthorne
strainer over fresh cubed ice in a highball glass. Top with sparkling water.
Give a light stir.
Express lemon oil over the top of the drink, then discard the peel.
