Baked egg with spinach, truffle and Truffle Glaze with Balsamic Vinegar of Modena PGI

INGREDIENTS for 4 people:

1 kg of baby spinach already washed
4 eggs
1 garlic clove
1 black truffle
Carandini Truffle Glaze with Balsamic Vinegar of Modena PGI
Extra virgin olive oil
Salt and pepper to taste

Method

Clean the garlic clove and cut it into thin slices.

Fry the garlic in the oil in a high-sided pan and add the spinach.

Cook for about 8 minutes. Season spinach with salt and pepper to taste.

Distribute the spinach in serving bowls that can go in the oven. Crack the eggs on top of the spinach, season with a pinch of salt, a grind of pepper and bake in a preheated oven at 200° for about 10 minutes until the egg is cooked through.

Remove from the oven, add the truffle cut into slivers, a drizzle of oil if necessary and the Carandini truffle glaze with Balsamic Vinegar of Modena PGI.
Serve with slices of toasted bread.
