Avocado egg salad with ginger carrot dressing

For the Dressing

1 carrot
1 apple
2 tbsp of Applelixir with Apple Cider Vinegar , Kombucha ,
Ginger and Turmeric
Salt and
pepper
Extra Virgin Olive Oil


For Salad

2 eggs
1 avocado
1 cup of edamame
1 cuo of wakame seaweed
1 carrot
1 Fennel
Soy Sauce
Lime

Method

For the dressing , clean , cut and peel carrot . Blanch the carrot in water for 10 minutes. Place the carrot apple 2 tablespoon of Applelixir in a blender and mix until it become smooth if needed add some water). Add salt and pepper to taste and some extra virgin olive oil. Mix well and s tore in a sealable container in the refrigerator.

Boil eggs for 7 minutes. Eggs must be hard boiled but keeping soft the yolk. Once done, put immediately eggs in cold water, peel them and put in a cup with soy sauce. Marinade for 30 minutes.

In the meantime , cut the avocado into slices. Clean and peel the carrot and the fennel and cut into julienne strips. Boil for few minutes edamame in water. Serve the avocado salad with some drops of lime and with the ginger carrot dressing
